Our Mini Protein Meat Loaves is a nutrient dense recipe, packed full of protein and flavours – the perfect bite sized appetisers to help you stay full for longer! Even better, these mini Meat Loaves are so versatile – you can bring them to work, for the kids school lunch and they work just as well with yoghurt dressing, salad or with your favourite pasta on the side. Go all creative with this one.
Ingredients
500 grams Lean Beef Mince
6 slices of prosciutto
½ red onion finely chopped
½ cup panko crumbs
¼ cup parmesan
4 scoops of Tasteless Protein by Feel Good Protein
2 teaspoons garlic
1 teaspoon ginger
1 teaspoon salt
Fresh Mint and Dill to taste
Dressing
1 cup yoghurt
2 sprigs of dill finely chopped
2 sprigs of mint roughly chopped
1 tablespoon of sugar free maple syrup
2 Scoops Tasteless Protein by Feel Good Protein
Salt and pepper to taste
Method
Firstly, preheat oven to 180 degrees Celcius.
Place prosciutto slices across mini meat loaf pans.
Place beef mince into a large bowl, add the rest of the ingredients and mix well.
Then, create meat loaf shapes using whatever method you prefer to obtain the size that you require. We use our gloved hands.
Afterward, place the already-formed mini loaves and have each of them wrapped around the prosciutto.
Transfer the wire rack and tray into the oven.
Lastly, place the mini loaf pan into the oven for 25 – 30 minutes.
While the meatballs are cooking combine all the ingredients for the dressing in a small bowl or jug.
Pour dressing into a bowl, top with olive oil, salt and pepper and some fresh herbs.
Remove meatballs from oven and skewer each meatball with a toothpick and serve immediately!
