Versatile and delicious, our Salmon Potato Protein Patties go well in kids school lunchbox and for adults to bring to work, or about anything else. Whilst you can eat them on their own, we used mini brioche buns to turn these Salmon Potato Protein Patties into adorable, yummiest mini burgers and served with salad or vegetables. Ingredients for Salmon Potato Protein Patties
1 can (415 grams) of Wild Pink Salmon
6 Spud Lite Potatoes (25% less carbs)
1 tablespoon Mingle Whoops We Forgot The Bagel
1 tablespoon Mingle Holy Moly
4 Scoops Tasteless Protein by Feel Good Protein
1 teaspoon puree Ginger
1 Small bunch of fresh Dill
½ cup of Crunchy Crumb (gluten free) or Panko Crumbs
¼ cup Grated Parmesan
1 egg
Method for Salmon Potato Protein Patties
Cut 6 Spud Lite potatoes into cubes and boil them until they are soft and ready to be mashed. Allow to cool down slightly prior to mashing.
While the potatoes are cooling down, drain the can of Salmon then remove the bones.
Mash the potatoes lightly and leave some larger pieces for texture!
Afterwards, add in the rest of the ingredients, one at a time and pour the egg at the very last.
Mix everything together and then, place the patties onto a lined tray or your air fryer tray that has been lightly sprayed with olive oil.
Cook on 180C for 16 – 18 minutes or until they are beautifully golden on the inside.
Optional: For our Salmon Potato Protein Patties , we served these with mini brioche buns and add Mingle Better Tangy BBQ Sauce and a Yoghurt Dressing. YUM!
