We really adore these Turkey Protein Cups as they are a great, easy, grab and go lunch or a really high protein snack!
Ingredients
6 Eggs
4 scoops Tasteless Protein Powder
3 Mini Capsicums
3 cherry tomatoes
Chicken Salt and Black Pepper to taste
6 slices of Turkey
½ cup grated cheese
Chives finely cut
Method
Pre-heat oven to 180 degrees.
Finely slice the mini capsicums and cherry tomatoes.
Add to a large mixing jug or bowl with a lip that can be used to pour from.
Crack the eggs into the bowl, add the Tasteless Protein and mix well.
Add seasoning.
Lightly spray your muffin pan with olive oil.
Into the greased muffin pan add 6 slices of turkey – to each muffin cup.
Pour the egg mixture into each pan.
Top with grated cheese and freshly chopped chives.
Bake in a 180 degree oven for approximately 20 minutes or until they achieve your desired level of browning on top. These muffin cups will puff up while baking and then relax again after cooking.
Enjoy either hot or cold as lunch with a beautiful relish or as a snack!
