Zucchini slice is such a well-loved recipe and this one is no exception. High in protein and full of flavour, we know that you will love it.
2 Bacon Rounds
1 grated Zucchini
½ cup Greek yoghurt
¾ cup self-raising flour
4 scoops Tasteless Protein by Feel Good Protein
1 teaspoon salt
Pepper to taste
1 teaspoon garlic powder
½ cup fresh baby spinach
½ cup mozzarella
Cherry Tomatoes to garnish (if desired)
Pre – heat oven to 180 degrees Celsius
Slice Bacon and place in a large bowl.
Add grated zucchini to a bowl and add in flour, eggs, Greek yoghurt, Tasteless Protein, Baby Spinach, Salt and Garlic Powder.
Mix everything together until everything is beautifully combined.
Add Black Pepper and Mozzarella and mix again.
Place mixture into silicone mini loaf pan.
Top with halved cherry tomatoes.
Bake for 35-40 minutes or until they are cooked when tested with a skewer.
