Ingredients
1 large, sweet potato (approximately 2 ½ cups)
1 ½ brown onions
2 finely diced bacon rounds
1 tbsp sugar-free maple syrup
1 tsp coconut oil
2 vegetable stock cubes
1 potato
1 clove black garlic
1 clove garlic
1 tsp ginger
1 tsp mixed herbs
125g ricotta
4 scoops Tasteless Protein by Feel Good Protein
Method
- Preheat oven to 200°C.
- Place your whole sweet potato on a lined baking tray and roast for 45-60 minutes. Set aside to cool, then scoop out the flesh and discard the skin.
- In a large pot, add the potato, sweet potato, brown onion, garlic, ginger, black garlic, mixed herbs and vegetable stock cubes. Add just enough water to cover the vegetables (4-5 cups).
- Bring the pot to a boil, then reduce to a gentle simmer for 25-30 minutes.
- Remove the pot from the heat. Use a stick blender to blend the soup until smooth and creamy.
- Stir in ricotta and Tasteless Protein and blend again.
- In a frying pan, melt the coconut oil and fry the bacon until crispy.
- Add the remaining onion and sauté until golden. Add in the maple syrup for a sweet taste.
- Ladle the warm soup into bowls and top with a spoonful of the bacon mix.
