A brand-new bariatric-friendly one-pot dinner that’s low in carbs, gluten-free, and now even higher in protein thanks to a sneaky scoop of Tasteless Protein. This Creamy Chicken & Haloumi Smash is perfect for post-op bariatric tummies or anyone needing a nourishing, low-fuss meal.
Ingredients
150g chicken thigh, diced small
1/2 zucchini, grated
¼ capsicum finely chopped
30g haloumi, grated or very finely diced
1 tbsp Greek yoghurt
1 tsp olive oil
1 scoop Tasteless Protein by Feel Good Protein
1 tsp of crushed garlic and ginger
1/4 tsp garlic powder
Pinch of smoked paprika
Salt and pepper to taste
Splash of water or chicken stock (only if needed for mixing)
Method
- Heat olive oil in a non-stick skillet over medium heat. Add chicken and cook for 4–5 minutes until golden and cooked through.
- Toss in grated zucchini and capsicum and cook for 2–3 minutes.
- In a small bowl, mix the scoop of Tasteless Protein with Greek yoghurt to create a smooth paste. Add a tiny splash of water or stock if needed to blend smoothly.
- Stir the protein-yoghurt mix into the pan along with garlic powder, paprika, salt, and pepper. Cook on low heat until creamy.
- Add the haloumi and stir gently until it melts slightly.
- Sprinkle fresh parsley or spring onion over the top and enjoy your Creamy Chicken & Haloumi Smash!
