Crispy Rice Paper Parcels

These Crispy Rice Paper Parcels are a mouth-watering high protein take inspired by the viral TikTok recipe.

Wrapped in a golden, crispy rice paper and filled with a mixture of aromatic chicken and vegetables, this recipe is gluten and dairy free, easy to portion, and perfect for bariatric lifestyles, busy cooks, and those who prefer smaller, protein-focused meals.

Ingredients

  • 2 scoops Tasteless Protein Collagen by Feel Good Protein 
  • 200g chicken mince 
  • 1/2 cup wombok 
  • 2 tbsp spring onion 
  • 1 tsp parsley 
  • 1 tbsp minced garlic 
  • 1 tsp minced ginger 
  • 1 tbsp gluten free soy sauce 
  • 1 tsp sesame oil 
  • Salt and pepper 
  • 16 rice paper sheets (2 per parcel) 
  • 1 tbsp coconut oil

Method

  1. Finely chop the wombok, spring onion and parsley, then add them to a large mixing bowl.  
  2. Add the chicken mince, protein powder, soy sauce, and sesame oil to the bowl and stir until the mixture is combined.  
  3. Heat a non-stick pan over medium heat and lightly spray with oil.  
  4. Add the garlic, ginger, and chicken mince to the pan and cook, breaking it up, until browned and the liquid has evaporated.  
  5. Season with salt and pepper to taste and remove from heat to allow the mixture to cool slightly.  
  6. To create each parcel, submerge one rice paper sheet in warm water until softened, then remove from water and lay flat.  
  7. Spoon a portion of filling into the centre of the rice paper, fold in the sides, then roll tightly to seal.  
  8. Dip a second sheet in the warm water and wrap it around the parcel then set aside.  
  9. Repeat until you have made 8 parcels.  
  10. Heat a non-stick pan over medium heat and add a small amount of coconut oil.  
  11. Place parcels seam side down first. Cook, turning gently, until all sides are golden and crispy.  
  12. Serve with dipping sauce and enjoy your Crispy Rice Paper Parcels!
