Ingredients
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
500 grams skinless chicken breast pre-cooked
1 can corn kernels
1 can creamed corn
4 cups chicken broth
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
4 scoops of Tasteless Protein by Feel Good Protein
Pimp My Salad – flavour: Hemp and Parm Cheez (Optional)
For Garnish
Chopped fresh parsley / green onions
Method
First thing in a large pot, heat the vegetable oil over medium heat.
Add the diced onion and minced garlic, and sauté until the onion becomes translucent and fragrant.
Then, add the sliced chicken breasts to the pot and cook until they are no longer pink, stirring occasionally.
Stir in the frozen corn kernels and cook for another minute or two.
Next, pour in the chicken broth, dried thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes to allow the flavours to meld together.
While the soup is simmering, add 4 scoops of Tasteless Protein by Feel Good Protein into the soup and stir until well combined.
Taste the soup and adjust the seasoning accordingly.
Ladle the Chicken and Corn soup into bowls and garnish with chopped fresh parsley or green onions.
