Originally developed without a bun in mind, this Black Bean Veg Protein Patties are flavour bomb and super delish even after incorporating and turned into a burger.
Ingredients
400g of can of carrots (drained)
400g of can black beans (drained)
Half red onion
1 zucchini grated
1 tbsp green curry paste
1 tbsp Holy Moly Guacamole
200g Danish feta
4 scoops of Tasteless Protein by Feel Good Protein
2 eggs
1 cup self raising flour
GARNISH
Cos lettuce
Greek no fat yoghurt
Sprouts
Cherry tomatoes
Method
Firstly, chop red onion finely.
Grate zucchini into a large bowl and then add the chopped onion.
Inside the bowl, add the carrots, black beans, Danish feta, self raising flour, Tasteless Protein by Feel Good Protein and then, mix.
Add curry paste, Holy Moly Guacamole, crack the eggs into your bowl and mix thoroughly so everything is well combined.
After that, allow the mixture to sit and rest for 5 minutes while preparing your pan.
Place your frying pan on a high heat, then lightly spray it with oil and allow pan to get very hot.
When the desired temperature is reached, add the mixture to the pan to form patties. Allow the patties to cook for approximately 4 minutes each side.
Afterwards, once browned on both sides, place the patty on a plate in the microwave for 1 minute so they are cooked right through.
Finally, place patties onto a bed of baby cos lettuce, then top them off with Greek yoghurt, sprouts and some tiny cherry tomatoes and enjoy!
