Our Chicken Protein Cup Bites is a lunch box staple for kids and grown ups alike! Simple to prepare and delicious, this makes lunch easier affair and they are such a fantastic hit in the protein scale. You can even do mix and match or go all creative with some of the ingredients to suit your liking – the combination options are endless and that’s why we adore these Cup Bites!
Ingredients
3 Eggs
100g of shredded chicken
½ a red onion finely chopped
3 scoops Tasteless Protein by Feel Good Protein
2 tablespoons Ricotta
6 thin slices mozzarella
6 slices of Chicken to line the muffin pan
Smokey Mingle All Natural Seasoning to taste
Tiny tomatoes (between 12 and 18 depending on their size)
Salt and pepper to taste
Method
Preheat oven to 180C.
Crack three eggs into a jug that you can pour from.
Then add three scoops of Tasteless by Feel Good Protein, 100g of shredded chicken to the jug and 2 tablespoons of Ricotta. Add in seasonings and chopped onion. Mix everything together in the jug.
Line each muffin pan with a piece of sliced chicken to create a cup and then pour the mixture into each cup.
Top with a slice of mozzarella and then add fresh parsley and basil.
Finally, cook for 18-20 minutes or until they achieve your desired level of golden deliciousness.
