If you love big flavour and fresh ingredients, this delicious Chicken with Protein Mango Salsa is about to become a weekly staple. Juicy Portuguese-seasoned chicken paired with a bright, protein-boosted mango salsa and your favourite wraps makes it quick, high-protein, and seriously tasty.
Ingredients
Mango Protein Salsa:
ÂĽ red onion, finely chopped
1 ripe mango, cubed
1 cucumber cubed
1 cup cherry tomatoes, quartered
3 tbsp maple syrup – sugar-free if desired
2 scoops Tasteless Whey by Feel Good Protein
Dried dill, salt and pepper if desired
40–60ml water
Portuguese Chicken Wraps:
500g chicken tenderloins
1 tbsp lime juice
1 tbsp apple cider vinegar
Portuguese seasoning
Olive oil spray
Wraps of choice
Fresh coriander
Mayo if desired
Method
- Chop the red onion, cucumber, mango and cherry tomatoes, adding them to a bowl as you go.
- Drizzle over 1 tbsp maple syrup, gently mix, and set aside.
- In a jug, combine 40–60 ml of water with the tasteless protein and blend until smooth.
- Add 2 tbsp maple syrup and blend again until fully dissolved.
- Pour the dressing over the salsa and mix well. Sprinkle with dried dill and season with salt and pepper if desired.
- Chop the coriander and set aside.
- Add lime juice, vinegar and Portuguese seasoning to the chicken and let it marinate for 5 minutes.
- Heat a pan sprayed with olive oil and place the chicken in seasoning-side down. Season the top side and cook until fully cooked through.
- Once cooked, remove the chicken from the pan.
- Place the tenderloins onto your wrap of choice, top with the mango salsa, fresh coriander and a little mayo. Wrap it up and enjoy!
