Chicken with Protein Mango Salsa

Ingredients

Mango Protein Salsa:
¼ red onion, finely chopped
1 ripe mango, cubed
1 cucumber cubed
1 cup cherry tomatoes, quartered
3 tbsp maple syrup – sugar-free if desired
2 scoops Tasteless Whey by Feel Good Protein
Dried dill, salt and pepper if desired
40–60ml water

Portuguese Chicken Wraps:
500g chicken tenderloins
1 tbsp lime juice
1 tbsp apple cider vinegar
Portuguese seasoning
Olive oil spray
Wraps of choice
Fresh coriander
Mayo if desired

Method

Chop the red onion, cucumber, mango and cherry tomatoes, adding them to a bowl as you go.
Drizzle over 1 tbsp maple syrup, gently mix, and set aside.
In a jug, combine 40–60 ml of water with the tasteless protein and blend until smooth.
Add 2 tbsp maple syrup and blend again until fully dissolved.
Pour the dressing over the salsa and mix well. Sprinkle with dried dill and season with salt and pepper if desired.
Chop the coriander and set aside.
Add lime juice, vinegar and Portuguese seasoning to the chicken and let it marinate for 5 minutes.
Heat a pan sprayed with olive oil and place the chicken in seasoning-side down. Season the top side and cook until fully cooked through.
Once cooked, remove the chicken from the pan.
Place the tenderloins onto your wrap of choice, top with the mango salsa, fresh coriander and a little mayo. Wrap it up and enjoy!
