When time is short and the desire for a stunning brunch is high, then our Protein Feta and Fig Flan is a must. Easy to prepare and doesn’t require to make pastry from scratch, this golden beauty is irresistible, so full of flavour it will thrill your palate like never before!

Ingredients

3 Figs
½ cup Farmers Union Greek Style Protein Yoghurt
125 grams of Greek Feta crumbled
3 Eggs
3 scoops Tasteless Protein by Feel Good Protein
1 Tablespoon brown sugar substitute
1 teaspoon Vanilla Extract
½ teaspoon flakey sea salt
Mingle Moroccan Seasoning
3 Low carb Simpsons Pantry Keto – Low Carb Super Seed Wraps

Method

Pre – heat oven to 170 degrees C

In a bowl with a lip or a jug, combine the following ingredients:

½ cup of Greek Style yoghurt, 125 grams crumbled Feta, 3 eggs, 3 scoops of Tasteless Protein by Feel Good Protein, 1 heaped tablespoon of Brown Sugar Substitute, 1 teaspoon of Vanilla and a sprinkle of flakey sea salt. 

Mix everything together until it is all well combined, allowing the feta to still have a crumbly texture.

Trim 3 Simpsons Pantry Super Seed Wraps to fit into 3 small nonstick flan dishes and place them into the dishes. (We did not spray the dishes with anything prior to adding our wrap base).

Pour the wet mixture into the bases.

Top each pie with a sprinkle of Mingle Moroccan Seasoning – as much or as little as you desire, but we prefer to be generous with this step.

Top the tarts with fresh fig segments.

Bake in your preheated oven for 22 minutes or until your pies are just slightly jiggly in the center but are beautifully baked and golden.

To serve drizzle with honey and enjoy the Protein Feta and Fig Flan
