Sweet Potato Bites with Tasteless Protein

These sweet potato bites are a great breakfast option but can be enjoyed at any time of the day!  We love them as a quick grab and go, one handed breakfast on those busy mornings and we also like to make them ahead of time for lunch boxes.  Made in a muffin pan or as a tray bake, this recipe is adaptable, quick, and so easy!


Non-stick cooking spray
6 eggs
6 scoops of Tasteless Protein
¾ cup grated sweet potato
½ teaspoon black pepper
1 teaspoon salt
Italian Seasoning to taste
¼ cup crumbled Greek Feta
½ cup mozzarella
Flat leaf parsley


Spray your muffin pan with non-stick cooking spray.

Peel and grate enough sweet potato to place a small amount in the base of each muffin pan.

Top with a small amount of mozzarella.

Combine your eggs, tasteless protein, salt and pepper in a mixing jug with a spout suitable for pouring.

Add crumbled feta and chopped parsley to the egg mixture and lightly mix.

Pour the mixture into the muffin pans on top of the sweet potato and cheese. 

Place in a Pre-heated 180 degree C oven for 25-30 minutes.
