These Fig & Raspberry Protein Pop-Tarts are the perfect mix of nourishing and nostalgic. Ingredients
For the pastry:
180g almond flour
40g coconut flour
2 scoops Tasteless Protein Collagen by Feel Good Protein
2 tbsp Saweet Pure Allulose Natural Sweetener
1 tsp xanthan gum
1 tsp baking powder
80g cold butter, cubed
2 large eggs
1 tsp vanilla extract
For the filling:
2 fresh figs, finely chopped
120g raspberries (fresh or frozen)
2 scoops Tasteless Fibre by Feel Good Protein
2 tbsp chia seeds
3 tbsp water
2 tbsp Saweet Pure Allulose Natural Sweetener
1 tsp lime juice
For the glaze:
60g cream cheese, softened
1 tbsp Truvia For Baking Icing Mix
2 tsp almond milk
Pinch of salt
Method
- Line a baking tray and preheat the oven to 175°C.
- Add finely chopped fresh figs, raspberries, water, Saweet Pure Allulose Natural Sweetener, and lime juice to a small pan. Cook over low heat for 8–10 minutes, stirring until soft.
- Stir through Tasteless Fibre and chia seeds, allowing the mixture to thicken into a jam-like consistency. Set aside to cool completely.
- Into a food processor, add almond flour, coconut flour, Tasteless Protein, Saweet Pure Allulose Natural Sweetener, xanthan gum, baking powder, and cold butter. Pulse until the mixture resembles breadcrumbs.
- Add eggs and vanilla extract, then pulse until dough forms. Chill the dough for 20 minutes.
- Roll the dough between two sheets of baking paper and cut into 12 equal rectangles.
- Spoon filling onto 6 rectangles, leaving a small border around the edges.
- Poke small holes into the remaining pastry pieces. Place the pastry tops over the filling and seal the edges with a fork. Brush with almond milk.
- Bake for 18–22 minutes or until lightly golden. Allow to cool completely.
- Mix cream cheese, Truvia For Baking Icing Mix, almond milk, and a pinch of salt until smooth. Spread over cooled Pop-Tarts. Enjoy your Fig & Raspberry Protein Pop-Tarts!
