Almond and Apricot Protein Bars

We all know how important it is to fuel ourselves well! We have found that having great choices available for snacks means that it is easier to make healthy choices and these Almond and Apricot Protein Bars fit the bill!

Ingredients

2 cups of rolled oats
1 Vanilla Feel Good Shake by Feel Good Protein
3 scoops of Tasteless Protein by Feel Good Protein
190 grams of  almond butter
¼ cup sugar free maple syrup
¼ teaspoon salt flakes
½ cup of dried apricots
¼ cup of Almond Milk
125g of Noshu Dark Chocolate Chips
1 teaspoon Coconut Oil

Method

To your food processor fitted with its blade add the rolled oats, protein powders and salt. 

Pulse these ingredients together until combined. 

Add in the maple syrup, almond butter and dried apricots and mix again.

While the processor is still running, slowly add the almond milk until the mixture is coming together and is nice and smooth.

Place the mixture into a pre-lined loaf pan.

To make the chocolate topping, slowly melt the chocolate chips in the microwave and add the coconut oil.

Pour on top of the mixture and and allow it to firm up in the refrigerator for one hour before cutting into bars.

These Bars will keep in the fridge for a week at least and can be frozen for up to three months with ease!
