We love these Almond Vanilla Protein Cookies. They are beautifully crisp on the outside but luscious and soft on the inside! Gorgeous and light, these nibble size cookies are very easy and convenient to pack and take away, either for picnic or gatherings. These also go perfectly with any of your favourite hot beverage too – this time, we have hot chocolate, YUM!
2 large egg whites
180g almond flour
4 scoops Tasteless Protein by Feel Good Protein
150g Truvia or normal caster sugar
20 ml vanilla extract
3 tbsp icing sugar (to roll the biscuits in prior to baking)
3 tbsp caster sugar ( to roll the biscuits in prior to baking)
Pre-heat your oven to 160C.
Get a very clean bowl and add two egg whites, whisk until the soft peaks form and then set to the side.
In another bowl, add your almond flour, Tasteless Protein by Feel Good Protein, Truvia caster sugar and vanilla extract.
Afterwards, pour in the egg whites and mix together until you achieve a paste-like consistency form. Bear in mind, this mixing process may take a little while, but just continue mixing until you see the mixture changing texture.
Once a thick paste texture is achieved, roll the mixture into balls and coat each one with Truvia Caster Sugar and then the Truvia Icing Sugar.
Finally, bake for approximately 17 minutes.
Leave the freshly baked Cookies to cool by resting them on a tray and then dust with icing mixture on top, if desired.
