Apple Cinnamon Protein Muffins

Apple Cinnamon Protein Muffins make a great lunch box snack or a wonderful treat to share with your friends at a picnic! Who ever thought something as tasty as Apple Cinnamon muffins could be so bariatric friendly and high in protein ❤️

Ingredients

160 grams of Red Tractor Paleo Flour
1 Vanilla Feel Good Shake (60 grams of Vanilla Protein Powder)
3 Scoops of Tasteless Protein
¼ cup macadamias
2 Teaspoons Baking Powder
1 Teaspoon cinnamon
½ Teaspoon Salt
½ Teaspoon Bi Carb Soda
2 cups Grated Apple
1 cup Apple Sauce
1 Teaspoon Vanilla Extract
2 eggs
½ cup of Greek yoghurt
¼ cup coconut oil

Method

Pre-heat oven to 180 degrees C.

In a large bowl place all of the dry ingredients including Tasteless Protein and mix them together.

Gently squeeze excess moisture out of the grated apple and add it to the mixture and lightly mix.

In a separate bowl, mix together the applesauce, vanilla and Greek yoghurt.

Add the eggs into the wet ingredients one at a time, mixing well in between each egg.

Add in the melted coconut oil and mix together to achieve a smooth mixture.

Add the wet mixture into the dry ingredients and the grated apple.

Lightly mix until everything is combined.

Divide the mixture into your muffin pans and bake for 14 – 18 minutes or until a toothpick inserted into the muffins comes out clean.
