Ingredients For The Festive Christmas Salad
1 chicken breast cooked and cubed
1 tbsp Pimp My Salad – Hemp Parm Cheez
½ a large Mango
1 cup baby spinach leaves
½ cup fresh raspberries
½ cup Tiny Tom’s Tomatoes
1 cup Watercress
½ cup blueberries
½ cup Bocconcini balls
Salt and pepper, to taste
Ingredients For The Dressing
2 tablespoons white vinegar
2 tablespoons Rice Malt Syrup
¼ cup vanilla yoghurt (optional)
1 teaspoon mustard Powder
3 Scoops Tasteless Protein by Feel Good Protein
Salt and pepper, to taste
Method
1. First, preheat oven and roast chicken.
2. Cut Mango into cubes and cut one chicken breast into cubes also.
3. Prepare the dressing. In a small bowl, whisk together vinegar, rice malt syrup, Mustard powder, Tasteless Protein by Feel Good Protein, salt, and pepper until well combined. Set aside. (Add yoghurt here if desired)
4. On a large plate or in a large bowl, layer all the salad ingredients beautifully to your liking.
5. Just before serving, drizzle the dressing over the salad. Toss or stir gently to coat all the ingredients with the dressing.
6. Serve your Festive Christmas Salad immediately!
