This recipe is an absolute favourite and works well for weight loss surgery and non weight loss surgery tummies alike. This is a super quick meal that can be on the table in 40 minutes from start to finish!
1 jar of pickles (you can marinade your chicken in pickle juice overnight for the most tender and succulent result).
Chicken thigh (breast) cut into strips – this recipe is easy to size up or down depending on the amount of people that are eating and their tummy capacity.
99% Fat Free Mayo – 1 tablespoon per chicken thigh.
2-3 Scoops of Tasteless Protein powder.
Bread Crumbs – Day old stale bread in the food processor is perfect or just store brought bread crumbs are fine.
Salt and Pepper to taste.
Avocado spray oil.
The day before place your cut up chicken into a zip lock bag and cover with pickle juice.
Right before coating your chicken for cooking, pour out pickle juice from the zip-lock bag and discard.
Pat chicken pieces dry on paper towel.
Coat each chicken piece with the mayo, a little pickle juice and tasteless protein mix and place in bread crumbs as you go.
Set your chicken pieces onto a pan lined with grease proof paper and spray with avocado oil.
Cook for 20 – 25 minutes in a 170 degree oven – the cooking time will vary depending on your oven.
Serve with a lovely fresh salad and some sweet potato fries!
