This chicken and quinoa salad is just delightful to enjoy during a hot summers evening, or at a dinner party with friends.

1 Chicken Breast
½ Red Capsicum
1 Cup Baby Spinach
1 Cup Cooked Quinoa
1 Teaspoon Seeded Mustard
1 Teaspoon Honey
2 Tablespoons White Vinegar
1 Scoop Tasteless Protein by Feel Good Protein
1 Tablespoon Olive Oil
1 Squirt of Lime Juice
Lightly season one chicken breast that has been tenderised and cook in a pan until nicely browned on both sides.
Add a tiny splash of white wine or water and place lid on to steam the Chicken through while preparing the Quinoa.
To one cup of dry quinoa add 2 cups of water or chicken stock and cook for 15 to 20 minutes.
When most of the liquid has been absorbed by the quinoa turn off the heat and cover the pot with a lid and allow the quinoa to steam for a further 5 minutes.
Check your chicken breast and once it is cooked through place on a cutting board and slice into small cubes.
Add to a large mixing bowl, your cubed chicken breast, capsicum, one cup of cooked quinoa, 1 cup of baby spinach, avocado and cucumber and mix this until everything is well combined.
To dress the salad, add 1 teaspoon of seeded mustard, lime juice, 1 scoop of Tasteless Protein, balsamic vinegar, olive oil and honey together in a small bowl and mix until well combined and then pour over the salad and enjoy!
